MANGO-LIME SALSA STIR FRY |

3T Olive Oil 6 cloves Fresh Garlic, press 1 Yellow Squash,
sliced 1 Zucchini, sliced ½ Med Onion, sliced 1 Sm Red Bell Pepper,
sliced
1 lb Chicken or Shrimp ½ can Pineapple Chunks 4 cups cooked rice 2
cups CVG Mango Lime Salsa 1 Pkg Peppercorn Feta
Heat oil on Med High, when hot add onions and garlic. Let cook 2 minutes, add
rest of vegetables, cook 3 minutes. Add meat until cooked thoroughly. Stir in
Salsa and Pineapples. Serve over rice and top with Peppercorn Feta Cheese. |
